Instructions:

  1. Prepare the Beet Base:

    1. Cook the Beets: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes. Add the minced garlic if using and cook for an additional minute.
    2. Add the grated beets to the skillet. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the beets are tender and the excess moisture has evaporated. Set aside to cool.
